Quinoa Taco Salad

It's getting colder out which means we naturally remove ourselves from cold, albeit fresh, salads and opt for the more meatier (plant based of course) soups and rice dishes. So we've been having a lot of rice and bean dishes ... variations of the same, according to HOMY. He'd rather not eat another rice and bean dish for a few months :) !! I have been missing the greens in my diet and today when we came home with a salad box of baby spinach I decided to make a taco salad ... except HOMY is not a big fan of TVP and is fed-up with beans .. hmm? Stuck between a rock and a hard place .. not quite so because he loves Quinoa and I had the perfect idea to turn my Quinoa Chili recipe into a Quinoa Taco Meat recipe. 


Prep Time: 20 min

Ingredients (Serves 4):
  1. 1 cup Quinoa, rinsed and drained.
  2. 1 cup Water
  3. 1/2 Medium Red Onion, diced
  4. 1 can (15 oz) Dark Red Kidney Beans, rinsed and drained
  5. 2 Large Tomatoes, diced
  6. 2 cups Yellow Corn, steamed and ready to serve. 
  7. 1 lb Baby Spinach, rinsed and ready to serve
  8. 1 tbsp minced Garlic
  9. 2 tsp Cumin powder
  10. 2 Coriander powder
  11. 1 tsp Italian seasoning
  12. 1 tsp Taco seasoning
  13. 2 tsp dried Cilantro leaves
  14. 2 tsp Chipotle Pepper (add more, to taste)
  15. 1 tbsp Light Molasses
  16. 4 tbsp Soy Sauce, or Bragg's Liquid Aminos
  17. Salt and Pepper, to taste
  18. Salsa, as dressing, to taste.
  19. Sliced Avocados or Guacamole, to taste (optional)
  20. Sliced Jalapenos, to taste (optional)
  21. Tortilla Strips, to taste (optional)
Directions:
In a large non-stick skillet, mix quinoa, water, red onion, and all spices and bring to a boil. Reduce heat to medium-low and cover and allow to simmer until quinoa is cooked well (about 10-12 min). Remove cover, mix in Kidney beans and allow the excess water to evaporate until the mixture has the consistency of well-browned taco meat. Taste test and add more cumin, taco seasoning, salt and chili peppers, if needed. Split the baby spinach into 4 large salad bowls. Top off with a generous sprinkle of yellow corn and fresh tomatoes. Drop a generous dollop of taco meat in the middle, add salsa for dressing and serve. Garnish with optional taco salad toppings, if you wish.

Mexican 7-Layer Dip

We were at the store a couple days ago for a mid-week grocery supplement trip when Tony picked up a container of 'ready to eat' Mexican dip from the deli-fresh section. I looked at it and it had more cheese and sour cream than any of the other whole ingredients and offered to make a whole foods-plant-based version at home. I mean, really, how hard could it be? So away we went .. picked up all of our ingredients and a bag of baked tortilla chips and we had the best lunch ever ... yep! we're those people! We at chips and dip for lunch! :)


Prep Time: <10 min

Ingredients (Serves 6):

  1. 1 x 16 oz can of La Preferida Fat Free Refried Black Beans 
  2. 1 x 8 oz bag of Shredded Lettuce (about 2 cups)
  3. 1 Medium White onion, finely diced
  4. 2 Medium Tomatoes, finely diced
  5. 1 x 4 oz can of Ortega Fire-Roasted Diced Green Chilies
  6. 1/2 x 3.8 oz can of Early California Sliced California Ripe Olives
  7. 0.5 cup Pace Restaurant Style Salsa
  8. 1 tbsp Ortega Taco Seasoning (to taste). 

Directions: 
I used black beans for this recipe because that's what we like to eat more than regular refried beans. Feel free to use a can of regular beans instead. The brand I used (La Preferida) has only cooked black beans, water, salt, and onion and garlic powder. I made sure also that the green chilies and olives are preserved in water, and not oil. Once all the ingredients are ready, start layering a bowl with the ingredients starting with half the lettuce, black beans, tomatoes, onions, black olives, green chilies, salsa, with sprinkles of taco seasoning between each layer. Finally top off with the remainder of the lettuce and add a few extra olives, and a sprinkle of taco seasoning, as a garnish. Refrigerate for about 30-60 minutes before serving. The longer the ingredients sit together, the better the flavors blend together. Serve with baked tortilla chips for an awesome experience.

Southwestern, Pan-Seared Smothered Tofu

Some days I stand in my pantry for a few minutes searching for something to make for dinner. This, despite the fact that the pantry and freezer are pretty well stocked, except at the end of the week ;) !!! I definitely wasn't expecting this on a Tuesday evening. Anyhow ... it turned out Tony had not eaten his lunch and was going to eat his leftovers for dinner. He's not a big fan of tofu so I decided that this would be my main ingredient. The rest of the recipe just kind of evolved around it, as I gathered up various items from the pantry and refrigerator. 

Southwestern, Pan-Seared Smothered Tofu
Prep Time: 20 min

Ingredients (Serves 2):
  1. 1 x 14oz Pack of Firm or Extra-Firm Tofu (cut into 4-6 strips)
  2. 1 x 12 oz Pack of fresh White Mushrooms, stems removed and halved.
  3. 1/2 cup frozen yellow corn
  4. 1/2 cup cooked Black beans, drained.
  5. 2 tsp Taco Seasoning
  6. 2-4 tbsp BBQ Sauce (your favorite)
  7. 2-4 tbsp Salsa (your favorite)
  8. Hot Sauce (optional)
Directions:
Heat a medium cast iron skillet to high heat (a drop of water should sizzle as soon as it is added to the skillet). Toss the mushrooms with a sprinkle of table salt and add to the heated skillet and dry roast for a few minutes until the mushrooms begin to darken. Remove mushrooms and set aside. Allow all the water released by the mushrooms to evaporate and the skillet to attain a nice uniform dry heat again. Move the mushrooms to the side and add each of the tofu slices directly onto the dry heated skillet. The tofu will sizzle immediately upon placing on the skillet. Do not move each piece for a couple of minutes. This allows a seared skin to form on the tofu which allows you to turn it without crumbling it. Sear the other side in a similar manner. 


Once each piece of tofu is well seared, add the mushrooms equally across the surface of the skillet, sprinkle taco seasoning over mushrooms and tofu, and then drizzle the salsa and BBQ sauce over the entire surface.  Next cover the tofu with black beans and corn, cover, reduce heat to medium low and allow everything to simmer for 5-7 minutes to allow the flavors to meld together. Garnish with hot sauce and serve with fresh bread, or toast as I did. Enjoy!!

Mushroom & Kale Tacos

If asked, any member of my family, ranging from 3 to 43 years, will say without pause that their ideal meal consists of Tacos. Since going plant-based I've tried to incorporate as many of my veggies into burritos and tacos and tonight's meal was no exception (although I cannot get any of the other 4 people to eat these tacos). I had some leftover Wilted Kale & Onion Salad from earlier in the week. And I saw some fresh mushrooms as I was taking the leftovers out of the fridge. Into a skillet went the sliced mushrooms, with 1 cup of Wilted Kale and Onion Salad and Voila!! 

Mushroom & Kale Tacos
Prep time: 15 min

Ingredients: 
  1. 1 bunch of Kale, stems removed and leaves coarsely torn
  2. 1 medium Red Onion, julienned
  3. 6-8 White button mushrooms, sliced thinly
  4. 2 cloves of Garlic, minced
  5. 3-4 tbsp Medium Salsa, to taste
  6. Salt & Pepper, to taste
  7. 4 Corn Tortillas, for taco shells.

Directions: 
Rinse torn kale in cold water, drain and set aside. Slice mushrooms and set aside. Line a large skillet with water. Add garlic and turn heat to medium. As soon as the garlic begins to simmer, add the julienned onions and mushrooms and kale. Cover, reduce heat to medium low. Within a couple of minutes, the kale will turn bright green and begin to wilt. Keep covered for 2 additional minutes. Remove lid and turn heat to high for a couple of minutes to allow the water to evaporate. The kale will however, continue to sweat so the tacos will be a little wet and drippy. I didn't mind that part of it. if you want your tacos really dry, make sure you dry the kale completely. In my opinion though kale doesn't taste as good when it is dry because it is a very fibrous leaf. Prepare taco shells by wrapping in foil and heating in a 350F oven for 5 minutes. Prepare tacos, Garnish with freshly cracked black pepper, and more salsa, as necessary. Serve warm. 

My Assessment: This isn't a dish that looks pretty ;) or appetizing to non-kale lovers :) but it was amazingly delish!!! I enjoyed these tacos with freshly made HH Butternut Squash Soup. I didn't add any additional toppings because this was flavorful enough for me. Optional toppings include freshly diced fresh tomatoes, olives, even fresh sweet corn.

Wilted Kale & Onion Salad

Because I am hypothyroid I avoid eating Goitrogenic foods. As the name implies, these are foods capable of causing Goiter. In layman's terms, these foods affect thyroid gland function by inhibiting synthesis of thyroid hormones, resulting in enlargement of the gland (aka goiter). Some examples include Brussels sprouts, Kohlrabi, Turnips, Rutabaga, Radishes, Cabbage, Kale, and Cauliflower. Cooking at least partially inactivates goitrogenic compounds in these foods so this salad, which uses New Veggie #23 - Kale, is the perfect way of getting the benefits of kale, without the adverse effects of goitrogens.

Wilted Kale & Onion Salad
Prep Time: 5-7 min

Ingredients:
  1. 1 bunch of Kale, stems removed, and leaves coarsely torn
  2. 1 medium Red Onion, julienned
  3. 1 clove of Garlic, minced
  4. 2-3 tbsp Medium Salsa, to taste
  5. Salt and Pepper, to taste.
Directions:

Remove lid and transfer kale to a salad bowl.  Garnish with freshly cracked black pepper, add salt if necessary and add a big dollop of medium salsa on top. Serve warm. 

Wilted Kale & Onion Salad
My Assessment: I really really like this salad and it is my go-to salad when I have a bunch of kale in the fridge and I'm not feeling like cooking anything even vaguely substantial. I also prefer this salad in cooler months because I've always hated eating a cold salad during that time of year. My body craves something warm and this works every time. I sometimes add other salad veggies to this salad including corn and sweet peppers, but it tastes great with just onions as well. The best part about kale is that it retains its crunchiness even after its been wilted for a few minutes. Enjoy!!
