New Veggie Resolution ...

So on December 31, 2011, in anticipation of the new year, I made 2 new resolutions - #1 was to go strictly vegetarian (plant based). No meat. No Cheese. No Dairy & #2 was to try as many previously untasted items from the produce section as I could. Since I've started, I've relaxed my rules to include grains, cereals and other products derived from plants. Here's all the new stuff I've tried so far ...  Give plant-based foods a try ... you won't regret it!!

  1. Wow!!! That's a lotta veggies you tried and it's only March! What did you make with the Tomatillos and the squashes? My aunt-in-law uses tomatillos in dal which comes out really well because of the tangy flavor.

    1. ... thanks Sam! With the tomatillos I made Salsa verde and I also roasted tomatillos along with zucchini for a great tangy roasted zucchini dish. I've tried a lot of different squashes .. ! The recipes are all online .. scroll up and click on the veggie names on the right hand side of the page :) Hugs to Sunay!! He's looking all grown up :)!

  2. 52 new veggies, that's awesome! You're inspiring me to get my butt back in the produce section and try some new veg. :-) Love the gorgeous pic of the purple cauliflower, by the way--where did you find it? I've never seen cauliflower that color before!

    1. Cauliflower comes in purple, green, orange and white :) I've found all 4 at the local Kroger but I've seen it also at WF, Meijer, Giant Eagle ... ! So it's available quite commonly. Hope you can find some soon :)

  3. I love how going plant-based encouraged creativity in the kitchen.. and the discovery of new foods. :) I have gone through a similar phase. I thought I had a new-to-me vegetable to add form your list (Cebollitas) but it turns out it is just scallions. Have fun with your veg adventures. :)
